Raw Coconut & Cocoa Truffle Balls

A healthy, easy treat to put together, that can be ready in 30 minutes or less? Yup, it is that easy, sweet and delicious.

I am a sucker for a treat. Especially one with chocolate and coconut! I love power-balls, but sometimes they are a bit too messy to make and clean up. I decided to try something different, and after some other inspirations, I ended up with my very own raw truffle delight!

All you need…


Ingredients:

  • 1/4 Cup Coconut Oil in liquid state
  • 2 tsp Vanilla Extract
  • 1 1/2 Cup Unsweetened Coconut Flakes for Truffles
  • 1/2 Cup Unsweetened Coconut Flakes for rolling
  • 1/2 Cup Dried Dates
  • 1/2 Cup Cocoa Nibs
  • 3/4 Cup Oat Flour
  • 1/4 Cup Honey
  • Dash of Sea Salt


In the Kitchen:

  • Wax Paper
  • Food Processor/ Blender
  • Mixing bowl & Mixer (sporks are my favorite)

 


1.In a blender,  add the flour and coconut flakes and process until finely ground, about a minute.

2. Add the dried dates and cocoa nibs. Pulse a few times to combine/until you reach a texture of your liking.

3. In your mixing bowl, combine the honey, coconut oil, vanilla extract, sea salt and mix it all up.

4. Next, add the mixture from the blender into the bowl and stir it all together.

5. Place the mixture into the refrigerator to make it firmer and easy to work with. This way, they’ll be more round and not flat-bottomed.

6. While the truffle mix is cooling in the fridge, line sheet pan or tupperware with wax paper. Remove the mixture from the fridge after about 10 minutes, then you can scoop the mixture into balls (using an ice cream scoop works great!), which should make about 8 to 10 of them. When you have a ball scooped and rounded, roll it on the coconut flakes to cover the truffles and then place on the wax covered sheet pan or tupperware. Place the truffles back in the fridge to harden and you’re done!
